Canaves Oia Epitome: The Best Address in the Aegean
Canaves Oia Epitome is the finest of the several Canaves properties in Oia, and the finest hotel in Santorini — which is a serious claim on an island where luxury hotels have proliferated to excess. It earns the distinction through design, service, and an unbeatable view of the caldera.
The Position
Canaves Oia Epitome sits on the caldera edge in the village of Oia, at the north-western tip of Santorini. The caldera view — the submerged volcano's central cone and the encircling cliff walls — is the defining feature of the island, and Canaves has the best position from which to experience it. Every room, every pool, every breakfast table faces west across the caldera and the endless Aegean.
The Hotel
Opened in 2020, the Epitome is the most recent and most ambitious of the Canaves properties: 27 suites and two villas, designed with a restraint that is genuinely unusual in Santorini's maximalist landscape. Whitewashed volumes, dark timber accents, minimal ornamentation — the architecture functions as a frame for the landscape rather than competing with it.
The Suite
We stayed in a Premium Suite with heated private plunge pool. The suite occupied its own carved-out level of the cliff, with a plunge pool on the terrace that sat directly on the caldera edge. The interior — polished concrete floors, custom furniture in linen and leather, a bathroom with a walk-in shower the size of a room — was spare and perfect. The sunset, viewed from the pool on the first evening, rendered us temporarily speechless.
Petra Restaurant
Canaves Oia's restaurant sits on a panoramic terrace and serves contemporary Greek cuisine that takes its ingredients seriously. The raw seafood selection — sea urchin, cured octopus, local prawns — is excellent. The grilled whole fish, brought to the table for approval before cooking, is as good as Santorini's reputation demands. The wine list is a serious education in Greek wines.
The Sunset
Every hotel in Oia claims the best sunset view, and all of them are partly correct. But the Canaves Epitome terrace — the pool edge at dusk, cold white wine in hand, the sun going down over the Thirassia island across the caldera — is specifically extraordinary. The sky turns colours I have never seen reproduced in photographs.
Verdict
Canaves Oia Epitome justifies its superlatives. The position, the architecture, the food, and the service constitute a complete and genuinely exceptional experience. If I am returning to Santorini, I am staying here.
